For the salad! 🥗
- 500g baby spinach – washed and strained
- 500g rocket – washed and strained
- 1/2 cup of green peas – cook per packet instructions if not using fresh and strain
- 1 whole avocado- sliced
For the Dressing
- 1/4 cup coconut sugar
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 2 tbsp toasted sesame seeds
- 1 tbsp soy sauce
- Precook 2tbsp of sesames on a low
- medium pay then set aside.
- Combine all the dressing ingredients together and shake well in a bottle.
- Toss everything together and enjoy!
If making this recipe and want to enjoy for the next day, simply leave the avocado out and add them in as you need them.
