Spicy Fried Chicken

A healthy take one of my favourite comfort foods. This one is perfect for lunch or dinner, with a side of greens or create your own healthy chicken burger!


  • 1kg chicken thighs
  • 2 eggs
  • 1/2 cup almond milk (or any DF milk)
  • 1 cup almond meal or brown rice flour
  • 1/2 tsp garlic
  • 1 tsp herb salt
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (optional)
  • 3 tbsp GF rice bread crumbs
  • 1 tbsp melted nuttelex


  • Slice up chicken thighs into 2cm strips
  • Whisk up eggs & milk in a bowl
  • In another bowl, mix together rice flour, herb salt, smoked paprika and garlic powder
  • Begin to coat the chicken strips in the egg mixture, then the flour mixture, whilst heating a large frying pan with the oil and nuttelex on a medium-high heat
  • Fry the chicken strips on both sides until golden brown
