This is THE go-to pancake recipe. It’s nourishing, low in sugar and super filling.
Top with your fave condiments. We love a mixed berry compote using apple purée to sweeten the berries – this keeps the sugar levels low but still has all the flavour.

- 1 banana mashed
- 2 tsp lemon juice
- 2 tsp lemon rind
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 cup chickpea flour
- 1/2 cup rice flour
- Combine all ingredients and mix well.
- Preheat a non stick fry pan with 1 tbsp oil.
- Then simply pour the batter onto the pan to your desired size/quantity of pancake.
