Feel all toasty and warm with this super easy soup!
Ingredients
- 1/2 pumpkin – skin removed and sliced
- 1 capsicum – sliced
- 1 zucchini- sliced
- 1 carrot – sliced
- 1 white onion
- 200ml of coconut cream
- 250ml of filtered water
- 1-2 tsp of garlic power
- Pinch of salt
Method
- Place all veggies on baking tray and pop in the oven in 180 degrees for 20-25 mins or until veggies and cooked through.
- Remove from the oven – transfer the veggies to a large pot, add the coconut cream and water, salt and garlic powder. Bring to boil.
- Turn the heat down to a low simmer and let the soup absorbed all the flavour for 10-15 mins.
Serve with some coconut yoghurt and toasted gf bread.🤤
