Winter Warmer Roasted Pumpkin & Capsicum Soup

Feel all toasty and warm with this super easy soup!


  • 1/2 pumpkin – skin removed and sliced
  • 1 capsicum – sliced
  • 1 zucchini- sliced
  • 1 carrot – sliced
  • 1 white onion
  • 200ml of coconut cream
  • 250ml of filtered water
  • 1-2 tsp of garlic power
  • Pinch of salt


  • Place all veggies on baking tray and pop in the oven in 180 degrees for 20-25 mins or until veggies and cooked through.
  • Remove from the oven – transfer the veggies to a large pot, add the coconut cream and water, salt and garlic powder. Bring to boil.
  • Turn the heat down to a low simmer and let the soup absorbed all the flavour for 10-15 mins.

Serve with some coconut yoghurt and toasted gf bread.🤤
